Zucchini Appetizers - cooking recipe
Ingredients

3 c. zucchini, grated
1 c. buttermilk biscuit mix
1/2 c. chopped onion
1/2 c. Parmesan cheese
2 tsp. parsley
1/2 tsp. salt
1/2 tsp. seasoned salt
2 tsp. oregano
dash black pepper
1/2 c. vegetable oil
4 eggs, slightly beaten
Preparation

Preheat oven to 375\u00b0.
Spray 9 x 13-inch pan with nonstick spray.
Mix all ingredients but zucchini.
Lightly fold in zucchini last.
Spread evenly in pan.
Bake until golden brown, about 40 minutes.
Cut into squares, then into triangles.
Serve warm.
Makes 4 to 5 dozen.
