Zucchini Relish - cooking recipe
Ingredients

10 c. zucchini, chopped
4 c. onion
5 Tbsp. pure salt
1 chopped green pepper
1 Tbsp. turmeric
1/4 tsp. pepper
2 Tbsp. celery salt
4 1/2 c. sugar
1 chopped red pepper
1 Tbsp. cornstarch
1 Tbsp. nutmeg
2 1/4 c. white vinegar
Preparation

Mix zucchini, onion and pure salt together well.
Let stand overnight in cold water.
Drain.
Mix remaining ingredients.
Pour into first three.
Bring to boil.
Then simmer, uncovered, for 30 minutes.
Pour into jar and process for 5 minutes.
