1/3 c. butter
1 pt. (2 c.) very soft ice cream
2 c. self-rising flour
1/2 c. sugar
1 tsp. lemon peel
sugar (for sprinkling)
Preparation

Melt butter in medium saucepan. Remove from heat. Stir in ice cream. Add remaining ingredients, stirring until smooth and well blended. Drop by teaspoonfuls onto greased cookie sheet. Sprinkle with sugar. Bake at 375\u00b0 for 10 to 12 minutes or until light golden brown.
