Zucchini Easter Bread - cooking recipe
Ingredients

3 eggs
1 c. oil
2 c. sugar
2 tsp. vanilla
3 c. flour
2 tsp. baking soda
1 1/2 tsp. cinnamon
1 tsp. salt
3/4 tsp. nutmeg
1/4 tsp. baking powder
1 c. dates or raisins, chopped
1 c. chopped nuts
2 c. unpeeled zucchini, shredded
1 (8 1/4 oz.) can crushed pineapple, drained
Preparation

Beat eggs, oil, sugar and vanilla until thick.
Stir in flour, baking soda, cinnamon, salt, nutmeg, baking powder, dates or raisins, nuts, zucchini and pineapple.
Mix well.
Pour into 2 well-greased 9 x 5-inch loaf pans.
Bake at 350\u00b0 for 1 hour or until bread tests done with a toothpick.
Freezes well.
