Zucchini Relish - cooking recipe
Ingredients

10 c. zucchini, chopped or grated
4 c. chopped onions
5 Tbsp. salt
1 Tbsp. cornstarch
6 c. sugar
2 1/4 c. vinegar
1 Tbsp. dry mustard
2 tsp. pepper
1 Tbsp. nutmeg
1 Tbsp. turmeric
Preparation

Mix zucchini, onions and salt all together and set overnight. Rinse and drain the next day.
Mix remaining ingredients in pan. Cook for 30 minutes, stirring a lot.
Pour into hot jars, then seal.
