Zucchini Bread - cooking recipe
Ingredients

3 c. plain flour
1 tsp. baking powder
1 tsp. soda
1 tsp. cinnamon
1 tsp. nutmeg
1 c. chopped nuts (walnuts or pecans)
3/4 c. vegetable oil
3 eggs
2 c. sugar
2 tsp. vanilla
3 c. shredded zucchini
Preparation

Combine first 6 ingredients in mixing bowl.
Make a well in center of mixture.
In separate bowl, combine oil, eggs, sugar and vanilla.
Mix well.
Stir in shredded zucchini.
Add mixture to dry ingredients.
Stir just until moistened.
Spoon into 2 greased and floured 8 1/2 x 4 1/2-inch loaf pans.
Bake at 350\u00b0 for 1 hour.
Cool in pans for 10 minutes.
Turn out on wire rack and cool completely.
Makes 2 loaves.
Freezes well.
