Pineapple Zucchini Cake - cooking recipe
Ingredients

3 eggs
2 c. sugar
1 tsp. vanilla
1 c. oil (shortening)
2 c. raw zucchini, peeled and chopped
3 c. flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1/2 c. crushed pineapple (undrained)
1 c. chopped walnuts
1/2 c. raisins
Preparation

Beat eggs, sugar, vanilla and shortening until fluffy.
Add zucchini, baking soda, baking powder, salt and flour.
Stir in pineapple, raisins and walnuts.
Mix well.
Pour into a 9 x 13-inch greased pan.
Bake at 350\u00b0 for 1 hour.
