Zucchini Relish - cooking recipe

Ingredients
    10 - 12 c. zucchini
    5 tbsp. salt
    2 1/4 c. white vinegar
    4 c. sugar
    pinch of red pepper
    1 tbsp. turmeric
    2 tsp. celery seed
    1 tsp. mustard
    1 sm. jar pimentos
    1 green pepper (chopped)
Preparation
    Grind zucchini with coarse chopper or grinder. Add salt, let stand overnight, if longer than 12 hours refrigerate. Wash and drain well. Add vinegar, sugar. red pepper, turmeric, and celery seed and dry mustard, pimentos, green peppers. Cook in large pot. Bring to boil, simmer for 5 minutes. Makes 5 quarts.
