Zucchini Bread - cooking recipe

Ingredients
    1 c. salad oil
    3 eggs, slightly beaten
    2 c. sugar
    2 c. grated raw zucchini
    2 tsp. vanilla extract
    1/4 tsp. baking powder
    1 tsp. salt
    3 c. all-purpose flour or 1 1/2 c. whole wheat flour
    1 tsp. soda
    2 tsp. cinnamon
    1 c. chopped walnuts or pecans
Preparation
    Combine oil, eggs, sugar, zucchini and vanilla in a large bowl; blend well.
    Stir in flour, soda, baking powder, salt and cinnamon.
    Blend; do not beat.
    Stir in nuts.
    Spoon batter into 2 well-greased 8 1/2 x 4 1/2 x 2 5/8-inch loaf pans.
    Bake at 325\u00b0 for 1 1/2 hours.
    Test for doneness.
