Zucchini Bread - cooking recipe

Ingredients
    3 eggs
    1 c. salad oil
    2 c. sugar
    2 c. zucchini, packed and chopped or coarsely grated
    1 tsp. vanilla
    3 tsp. cinnamon
    3 c. flour
    1 tsp. salt
    1/2 tsp. baking powder
    1 1/4 tsp. soda
    1/2 c. chopped nuts
    8 oz. crushed pineapple, well drained (optional)
Preparation
    Mix together in a large bowl.
    Bake at 350\u00b0 until toothpick inserted in middle comes out clean, about 55 minutes.
    Makes two 9 x 5-inch loaves.
