Ingredients

1 c. sugar
1 1/3 c. shortening
1 egg
1 tsp. almond extract
3 c. flour
1 tsp. baking soda
1/2 tsp. salt
48 blanched whole almonds
Preparation

Preheat oven to 350\u00b0.
Cream together sugar and shortening until fluffy.
Add egg and extract; beat for 1 minute.
Sift together flour, baking soda and salt.
Gradually add to the creamed mixture, constantly mixing.
Roll dough into 1-inch balls. Place on greased baking sheet 1-inch apart.
Press center of each ball down gently, filling center with 1 almond.
Bake for 20 minutes.
Cool on a wire rack.
