Banana Nut Bread - cooking recipe
Ingredients

1/2 c. cooking oil
1 c. sugar
2 eggs, beaten
3 ripe bananas, mashed
2 c. all-purpose flour
1/2 tsp. baking powder
1/2 tsp. vanilla extract
1 tsp. baking soda
1/2 tsp. salt
3 Tbsp. milk
1/2 c. pecans, chopped
Preparation

Beat oil and sugar together.
Add eggs and banana pulp. Blend well.
Sift dry ingredients.
Add dry ingredients, milk and vanilla extract to mixture.
Mix well and stir in nuts.
I do all the mixing by hand with wire whisk.
Pour into a greased and floured 9 x 5 x 3-inch loaf pan.
Bake at 350\u00b0 for about 1 hour.
Cool well and store overnight before cutting.
Good with 6 to 8 ounces of cream cheese and apricot preserves for tea sandwiches.
Bananas must be very ripe for best bread.
Yields 1 loaf.
