1/2 c. soft butter or margarine
1/2 c. chunky peanut butter
1/2 c. sugar
1/2 c. light brown sugar, firmly packed
1 egg
Preparation
-
Preheat oven to 350\u00b0.
Sift flour with baking soda, baking powder and salt.
Set aside.
In large bowl, with portable electric mixer at medium speed, beat butter with peanut butter. Add the sugars gradually; beat until light and fluffy.
Beat in egg.
Add flour mixture; beat at low speed until well combined. Refrigerate dough, covered, until chilled, about 1 hour.
With teaspoon, shape dough into balls about 3/4-inch in diameter. Place 2 inches apart on ungreased cookie sheet.
Flatten with fork, making crisscross pattern.
Bake for 6 minutes or until lightly browned.
Let stand a few minutes, then remove to wire rack to cool.
Makes about 5 dozen.
