Zucchini Relish - cooking recipe

12 c. small pieces zucchini
4 c. sliced onions
5 Tbsp. salt
1 c. chopped sweet pepper
2 1/2 c. white vinegar
5 c. sugar
1 Tbsp. dry mustard
3/4 tsp. nutmeg
3/4 Tbsp. cornstarch
3/4 tsp. turmeric
1 1/2 tsp. celery seed
1/2 tsp. pepper
Preparation

Mix together zucchini, onions, sweet peppers, and salt.
Let set overnight, rinse, drain and grind up.
Mix vinegar, sugar, cornstarch and spices.
Cook to thicken.
When syrup is thickened, add ground vegetables, mix well and cook 30 minutes.
Put in sterilized jars and seal, leave 1/4-inch space.
