Ingredients

1 lb. butter or margarine
1 c. sugar
4 c. sifted all-purpose flour
4 eggs (save 2 whites for trimming)
Preparation

Mix butter and sugar together on a floured board. Add sifted flour and eggs.
Mix well. Roll cookie dough on board. Cut with round cookie cutter.
Place half of the rounds on lightly greased baking sheet. The other half of the rounds should be cut out of the center with smaller round cutter. Dip the centered halves into egg white and then ground nuts.
Place on baking sheet. Bake 12 minutes.
Spread bottom portion with jams or preserves, then add center cut cookie to top.
Makes about 48 cookies.
