Peach Bread - cooking recipe
Ingredients

2 firm ripe peaches
2 1/4 c. all-purpose flour
1/2 c. granulated sugar
1/4 c. packed brown sugar
1 tsp. baking soda
1/4 tsp. salt
2 large eggs
2 Tbsp. plus 2 tsp. vegetable oil
1 tsp. almond extract
1 tsp. fresh lemon juice
Preparation

Preheat oven to 350\u00b0.
Lightly spray 8 1/2-inch loaf pan with nonstick cooking spray.
Bring a medium saucepan of water to a boil over high heat.
Add peaches and blanch for 30 to 45 seconds. Remove the peaches to a colander and cool under cold running water to stop the cooking.
Set aside.
