Lemon-Carrot Bread 1-Loaf - cooking recipe

Ingredients
    3 eggs
    1 c. vegetable oil
    1 3/4 c. sugar
    2 c. carrots, shredded
    1/2 lemon (medium size)
    3 c. flour
    1 tsp. salt
    1 tsp. baking soda
    1/2 tsp. baking powder
Preparation
    Grind lemon (peel and pulp) with meat chopper or blender.
    Beat eggs in mixing bowl.
    Add oil and sugar.
    Mix well.
    Add carrots and lemon; blend.
    Sift together dry ingredients.
    Add to liquid ingredients and mix just to blend.
    Pour into greased loaf pan and bake at 350\u00b0 for about 1 hour.
