Banana Carrot Bread - cooking recipe
Ingredients

1 c. mashed bananas
1 c. sugar
3/4 c. salad oil
2 eggs
2 c. sifted all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
1 c. finely grated carrots
1/2 c. nuts or pecans
Preparation

Combine bananas, sugar, oil and eggs in large bowl.
Beat with electric mixer 2 minutes (or 300 strokes by hand).
Sift together flour, soda, salt and cinnamon.
Fold into banana mixture.
Stir in carrots and nuts.
Stir into greased and floured 9 x 5 x 2 1/2-inch pan.
Bake at 350\u00b0 for 55 to 60 minutes.
Cool in pan 10 minutes.
Remove from pan and cool on rack.
Wrap and store overnight before cutting.
May substitute zucchini for carrots.
