Raisin Zucchini Bread - cooking recipe

Ingredients
    2 medium zucchini
    2 c. sugar
    1 c. oil
    3 eggs, beaten
    1 Tbsp. vanilla
    3 c. flour
    1 Tbsp. cinnamon
    1 tsp. salt
    1 tsp. soda
    1 tsp. baking powder
    1 c. raisins
    1 c. walnuts
Preparation
    Finely shred zucchini. Measure 2 cups. Set aside. Cream sugar and oil. Add eggs, zucchini and vanilla. Mix well. Combine dry ingredients. Combine with zucchini. Mix well. Pour into 2 greased and floured loaf pans. Bake at 350\u00b0 for 1 hour. Let stand 10 minutes. Turn out on wire rack.
