Zucchini Pineapple - cooking recipe

Ingredients
    1 gal. grated or cubed, peeled zucchini
    3 c. sugar
    1 1/2 c. ReaLemon
    3 c. pineapple juice
Preparation
    Mix and simmer for a few minutes until zucchini begins to soften slightly.
    Chill and serve as pineapple to top cheesecake. Mix in salads or use in carrot cake.
    It's unbelievable!
