Low-Fat Zucchini Bread - cooking recipe

Ingredients
    3/4 c. egg substitute
    1 c. canola oil
    1 1/3 c. sugar
    2 tsp. vanilla
    2 c. grated zucchini
    3 c. flour
    1 tsp. salt
    1 tsp. cinnamon
    1 tsp. baking soda
    1/2 tsp. baking powder
Preparation
    Mix the first 4 ingredients together. Add the zucchini.
    Sift the remaining ingredients.
    Add wet mixture to dry ingredients. Mix well.
    (If desired, add 1/2 cup nuts or raisins.)
    Grease two 8-inch loaf pans. Bake 1 hour in a 325\u00b0 oven.
