Ingredients

2 3/4 c. sifted flour
1/2 tsp. salt
1/4 tsp. soda
1/4 tsp. baking powder
1/2 c. soft shortening
1/2 c. soft butter
1/2 c. firmly packed brown sugar
1/2 c. granulated sugar
1 egg (unbeaten)
2 Tbsp. orange juice
1 Tbsp. orange rind
1/2 tsp. lemon extract
1 c. pecans
Preparation

Sift dry ingredients together.
Into large bowl of mixer, place shortening, butter, sugars and egg.
Beat on #7 speed for 2 minutes.
Add juice, orange rind, lemon extract, pecans and the sifted dry ingredients.
Beat on #1 speed about 1 minute.
Scrape bowl while beating.
Shape into rolls and wrap in waxed paper. Chill several hours.
Slice thin with a sharp knife and bake on greased cookie sheet for 12 minutes at 350\u00b0.
Makes 5 dozen cookies.
I always double this recipe and freeze extra rolls for later.
