Rhubarb-Orange Bread - cooking recipe

Ingredients
    rind of 2 oranges
    3 Tbsp. water
    2 c. sugar, divided
    1 c. buttermilk
    2 eggs
    3 c. flour
    1/4 tsp. salt
    3 tsp. baking powder
    1 1/2 c. rhubarb, cut fine
Preparation
    Cut orange rind very fine.
    Cover with water.
    Cook until tender; drain.
    Add 3 tablespoons water and 1 cup sugar.
    Boil until thick; set aside.
    Combine buttermilk with remaining 1 cup sugar.
    Beat in eggs.
    Sift flour with salt and baking powder. Stir into egg mixture.
    Stir in rhubarb and orange rind.
    Pour into two greased 9 x 5-inch loaf pans.
    Bake in 350\u00b0 oven for 45 minutes.
