Ingredients

2/3 c. butter or margarine
1 1/2 c. sugar
2 eggs
1 tsp. lemon extract
4 Tbsp. pineapple juice
3 c. flour
1/4 tsp. salt
1/4 tsp. baking powder
1/2 tsp. baking soda
1 small can crushed pineapple, drained
chopped nuts (optional)
Preparation

Cream the butter and sugar.
Beat in eggs, lemon extract and pineapple juice.
Mix dry ingredients; add to egg mixture.
Add pineapple and nuts.
Drop from teaspoon onto greased cookie sheet. Bake at 350\u00b0 for 10 to 12 minutes.
