Crispy Zucchini Or Eggplant - cooking recipe

Ingredients
    1/2 c. mayonnaise or salad dressing
    1 Tbsp. minced onion
    1/4 tsp. salt
    1/3 c. fine dried bread crumbs
    1/3 c. grated Parmesan cheese
    1/2 tsp. dried Italian seasoning
    1 zucchini or eggplant, cut in 1/2-inch slices
Preparation
    In a small bowl, combine the first 3 ingredients (or can use 1/2 cup Hidden Valley Ranch dressing in place of the 3 ingredients).
    On a waxed paper, combine next 3 ingredients.
    Brush both sides of the sliced zucchini with the mayonnaise mixture and coat using crumb mixture.
    Place in shallow pan or baking sheet. Bake at 425\u00b0 for 15 to 17 minutes or until browned.
