Banana Bread - cooking recipe

Ingredients
    1/3 c. shortening
    2/3 c. sugar
    3/4 tsp. grated lemon rind
    1 beaten egg
    2 to 3 ripe bananas
    1 3/4 c. all-purpose flour
    2 tsp. baking powder
    1/4 tsp. soda
Preparation
    Mash 2 or 3 fully ripe bananas to make 1 cup banana pulp. Cream shortening, sugar, lemon rind and beaten egg. Sift flour with baking powder and soda. Add sifted ingredients in 3 parts to the sugar mixture alternately with the banana pulp.
    Beat the batter after each addition until smooth. Place in greased bread pan, 4 x 8-inch. Bake at 350\u00b0 for 1 hour. You may add 1/2 cup nuts or 1/2 cup raisins, soft dried prunes, apricots or dates, if desired.
