Toasted Coconut Bread - cooking recipe

Ingredients
    1 c. toasted coconut
    2 c. flour
    3/4 c. sugar
    1 Tbsp. baking powder
    1/2 tsp. salt
    1 beaten egg
    1 c. milk
    1/2 c. melted shortening or oil
    1 tsp. vanilla
Preparation
    Mix dry ingredients well.
    Add wet ingredients all at once. Mix well.
    Pour into 9 x 5-inch greased loaf tin.
    Bake at 350\u00b0 for 1 hour or until tested done.
    As an alternative, pour into muffin tins and bake at 400\u00b0 for 20 minutes.
    Makes 1 loaf or 12 muffins.
