Pita Bread - cooking recipe

Ingredients
    2 1/4 c. warm water (not hot, but very warm)
    2 Tbsp. sugar
    2 envelopes active dry yeast
    2 Tbsp. olive oil
    1 Tbsp. salt
    6 1/2 c. sifted flour
Preparation
    In mixing bowl, combine warm water, yeast, sugar, salt and olive oil.
    Mix well.
    Gradually work in enough flour to make a soft dough that leaves the sides of the bowl and does not stick to hands.
    Turn onto a lightly floured board.
    Knead until smooth and elastic.
    Place in greased bowl.
    Cover and let set 20 minutes. Shape dough into balls about the size of oranges and flatten slightly.
    Place the balls on floured surface and keep covered with a dish towel to prevent dough from drying.
    Let set 5 minutes.
