Zucchini Or Carrot Bread - cooking recipe
Ingredients

1 c. oil
1 c. brown sugar
3 eggs
2 c. zucchini or carrots, peeled, seeded and grated
2 tsp. vanilla
2 c. wheat flour
1 c. white flour
1 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
2 tsp. cinnamon
1/2 c. walnuts, chopped
1 (8 oz.) can crushed pineapple, well drained (optional)
Preparation

In a large bowl, cream the oil and sugar.
Beat in eggs one at a time.
Add zucchini or carrots or both (2 cups total) and vanilla.
Add remaining ingredients (pineapple is optional) and beat until well combined.
Pour into two loaf pans.
Bake at 350\u00b0 for 50 to 60 minutes or until toothpick inserted in center comes out clean.
