Lemon-Zucchini Rice - cooking recipe

Ingredients
    1 1/4 c. chicken broth
    1/2 c. water
    1/4 tsp. salt
    1/4 tsp. pepper
    1 c. uncooked long-grain white rice
    8 oz. zucchini, shredded and drained
    1 Tbsp. lemon juice
Preparation
    Bring broth, water, salt and pepper to a boil in saucepan. Add rice.
    Return to boiling.
    Lower heat; simmer, covered, 20 minutes.
    Set aside, covered, 5 minutes.
    Uncover and fluff rice with a fork.
    Add zucchini and lemon juice.
