Ingredients

1/2 c. butter or margarine
1/2 c. Ricotta cheese
1 tsp. vanilla
1 c. sugar
1 egg
2 c. sifted all-purpose flour
1/2 tsp. baking soda
1/2 tsp. salt
Preparation

Preheat oven to 350\u00b0.
Soften butter.
Blend with Ricotta until creamy.
Add vanilla and mix well.
Add sugar gradually, beating until well blended.
Add egg and mix well.
Slowly stir in dry ingredients and blend well.
Drop from a teaspoon onto lightly greased cookie sheet.
Bake 10 minutes.
Yields 30 to 36 cookies.
