Coconut Bread - cooking recipe
Ingredients

3 c. all-purpose flour
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
2 c. sugar
1 c. vegetable oil
4 eggs, lightly beaten
2 tsp. coconut extract
1 c. buttermilk
1 c. shredded coconut
1 c. chopped walnuts
Preparation

Combine flour, baking powder, baking soda and salt; set aside. In a large bowl, combine sugar, oil, eggs and coconut extract.
Add dry ingredients alternately with buttermilk; stir just until moistened. Fold in coconut and nuts. Pour into two greased and floured 8 1/2 x 4 1/2-inch x 2 1/2-inch loaf pans. Bake at 325\u00b0 for 1 hour or until breads test done. Cool 10 minutes in pans before removing to a wire rack to cool completely. Yield: 2 loaves.
