Peppermint Crunchies(Sugar-Free Candy) - cooking recipe

Ingredients
    2 sq. unsweetened chocolate
    1/2 c. granulated sugar substitute
    1/4 tsp. peppermint extract
    2 1/2 c. puffed rice cereal
Preparation
    Melt chocolate in top of double boiler.
    Remove from heat. Stir in sugar substitute and cook over hot water until thick, about 10 minutes.
    Remove from heat.
    Stir in extract and pour over puffed rice.
    Mix well.
    Drop by teaspoons onto wax lined paper.
    Chill about 1 hour in refrigerator.
    This makes 40 cookies with 23 calories per portion.
    Exchange 1/2 fat.
