1 1/4 c. all-purpose flour
3/4 tsp. baking soda
1/4 tsp. salt
1/2 c. margarine
1/2 c. peanut butter
1/2 c. sugar
1/2 c. packed brown sugar
1 egg
1/2 tsp. vanilla
Preparation

Stir together flour, sugar and salt.
In mixing bowl, beat margarine for 30 seconds.
Add peanut butter and sugars; beat until fluffy.
Add egg and vanilla and beat well.
Add dry ingredients; beat until well combined.
Shape dough into 1-inch balls; roll in granulated sugar if desired.
Place 2 inches apart on ungreased cookie sheet.
Crisscross with fork.
Bake at 375\u00b0 for about 10 to 12 minutes.
Cool for 1 minute before removing from cookie sheet.
