Zucchini Bread - cooking recipe

Ingredients
    3 c. flour (self-rising)
    1 tsp. ground cinnamon
    1 tsp. salt
    3 eggs
    1 c. sugar
    1 c. oil
    1 tsp. vanilla
    2 c. grated zucchini
Preparation
    Sift flour, cinnamon and salt together.
    Beat eggs until foamy.
    Add sugar, oil, vanilla and sifted dry ingredients a little at a time.
    The mixture will be thick.
    Add the zucchini; mixture will be gummy.
    Pour into two well-greased 8 1/2 x 4 1/2 x 2 1/2-inch loaf pans and bake at 350\u00b0 for 1 hour.
    Check at 50 minutes with toothpick.
