Ingredients

1 egg
3/4 c. sugar
1 c. flour
1/4 tsp. cinnamon
1/2 tsp. baking soda
1 1/4 c. rolled oats
1/2 c. vegetable oil
1/4 c. molasses
1 tsp. salt
1/4 tsp. nutmeg
1 c. grated zucchini
Preparation

Mix together egg, oil, sugar and molasses until well blended. Combine flour, salt, nutmeg, cinnamon and baking soda.
Add oats and zucchini and mix.
Drop by 1/4 cup portions onto greased cookie sheet.
Flatten with a spoon.
Bake in preheated 350\u00b0 oven for about 12 minutes.
Makes 12 large cookies.
