Zucchini Latkes - cooking recipe
Ingredients

6 to 8 small firm zucchini, grated into a bowl
1 small onion, chopped into bowl
1 to 2 grated carrots (optional)
2 eggs
1/2 c. flour
1/2 tsp. hot pepper paste (optional)
salt and pepper (according to taste)
milk (if too stiff)
flour (if too soupy)
Preparation

Mix together zucchini, onion and carrot.
Mix in eggs, 1/2 cup flour, hot pepper paste, salt and pepper.
Add milk if too stiff or flour if too soupy.
Fry in oil.
Press spoonfuls down to flatten. Fry until golden brown, turning once.
Serve immediately with your choice of applesauce, sour cream, jam, etc.
