Gouda Zucchini - cooking recipe
Ingredients

1 large onion, chopped
1 clove garlic, mashed
1 stick butter or margarine
1/2 lb. mushrooms, sliced
4 medium zucchini, sliced
1 (3 oz.) jar chopped pimento
1/2 lb. Gouda cheese, sliced thin
Preparation

Saute onion and garlic in butter in a large skillet. Add mushrooms. Salt and pepper to taste.
Lay zucchini slices on top. Add pimento.
Cover skillet and cook over low heat for 15 to 20 minutes.
Lay cheese slices over top. Cover skillet until cheese melts.
Leftovers are good.
Serves 4 to 6.
