Carrot Bread - cooking recipe

Ingredients
    10 oz. pkg. cut carrots
    1 1/4 c. flour
    1 1/2 c. sugar
    1/3 c. brown sugar
    1 tsp. salt
    1 1/2 tsp. baking soda
    1/2 tsp. cinnamon
    1/2 tsp. nutmeg
    1/3 c. cooking oil
    2 eggs, beaten
    1/3 c. water
    1 tsp. vanilla
Preparation
    Cook carrots; place carrots in blender and grate coarsely, but do not puree.
    In a large bowl, combine flour, salt, baking soda, cinnamon and nutmeg.
    Stir together carrots, oil, eggs, water and vanilla.
    Add dry ingredients.
    Stir until blended.
    Pour batter into greased loaf pan.
    Bake at 350\u00b0 for 65 to 75 minutes, or until done.
    Check every so often to see if done.
    Cool for 10 minutes.
    Remove from pan and serve.
