Oatmeal Zucchini Bread - cooking recipe
Ingredients

1 c. sugar
3 eggs
2/3 c. vegetable oil
1 Tbsp. vanilla
2 1/2 c. all-purpose flour
1 c. quick or old fashioned oats, uncooked
1 c. chopped walnuts (optional)
1 Tbsp. baking powder
2 tsp. cinnamon
1 tsp. allspice
1/2 tsp. nutmeg
1 1/2 tsp. salt
3 coarsely shredded zucchini
Preparation

Heat oven to 350\u00b0.
Generously grease bottoms only of two 8 x 4-inch loaf pans.
Beat together sugar, eggs, oil and vanilla.
In separate bowl, combine flour, oats, baking powder, spices and salt, slowly add combined ingredients to wet mixture.
Mix just until dry ingredients are moistened.
Stir in zucchini and nuts.
Spoon batter into prepared pans.
Bake at 350\u00b0 about 50 minutes or until wooden pick inserted in center comes out clean.
Cool 10 minutes on wire rack, remove from pans.
Cool thoroughly before slicing. Makes two 8 x 4-inch loaves.
