Surprise Carrot Cookies - cooking recipe

Ingredients

1 c. cooked, mashed carrots
2 c. flour
3/4 c. butter
1 c. sugar
1 egg
2 tsp. baking powder
1/4 tsp. salt
1 tsp. rum flavoring
confectioners sugar and orange juice for frosting

Preparation

Cream the butter and sugar. Stir in carrots and egg. Add flour, baking powder, salt and rum flavoring. Drop on greased baking sheet. Bake at 375\u00b0 for 12 to 15 minutes.
Frost immediately with confectioners sugar and orange juice mixed to a spreading consistency.
