Vanilla Glazed Pumpkin Bread - cooking recipe

3 c. sugar
4 eggs, beaten
16 oz. can pumpkin
3 1/2 c. all purpose flour
2 tsp. salt
1/2 tsp. cinnamon
1 tsp. baking powder
2 tsp. baking soda
1 tsp. nutmeg
1 c. oil
2/3 c. water
3 tsp. vanilla extract
1 c. chopped pecans
Preparation

Beat sugar and eggs until fluffy; add pumpkin and mix well. In another bowl, combine flour, salt, cinnamon, baking powder, baking soda and nutmeg.
Stir dry ingredients into sugar mixture alternating with oil and water.
Add vanilla and mix well.
Beat for 3 minutes; fold in nuts.
Divide and pour into greased 5 inch x 3 inch loaf pans (makes 3 to 4).
Bake at 350\u00b0 for one hour; brush hot glaze over tops of warm loaves.
