Shredded Zucchini - cooking recipe

Ingredients
    6 small zucchini
    2 Tbsp. butter
    6 green onions, chopped
    salt and freshly ground pepper to taste
    freshly ground nutmeg
    Parmesan cheese (optional)
Preparation
    Shred zucchini.
    (A food processor is ideal, using the coarser shredding disc.)
    Drain on paper towels for a few minutes.
    Place zucchini in a large saucepan or skillet with butter and green onions.
    Turn on high heat and toss zucchini mixture until just heated through.
    Remove from heat and season to taste with salt, pepper and freshly ground nutmeg.
    Serve immediately, sprinkling with Parmesan cheese, if desired.
    Serves 6.
