Zucchini Relish - cooking recipe
Ingredients

10 c. zucchini, ground, do not peel
1 qt. onions
1 red pepper
1 green pepper
5 Tbsp. canning salt
4 1/2 c. sugar
2 1/2 c. white vinegar
1 Tbsp. dry mustard
1 Tbsp. cornstarch
1 Tbsp. turmeric
1 Tbsp. nutmeg
Preparation

Grind first four ingredients.
Sprinkle with canning salt and let stand 8 hours.
Drain, rinse and drain again.
Then add remaining ingredients.
Mix all together.
Mix well and simmer 30 minutes.
Pack hot in hot jars.
Process as desired.
