Zucchini Bread - cooking recipe

Ingredients
    3 eggs
    2 c. sugar
    3/4 c. vegetable oil
    1 Tbsp. vanilla
    2 c. loosely packed, coarsely grated zucchini
    2 c. flour
    1 Tbsp. cinnamon
    2 tsp. baking soda
    1 tsp. salt
    1/4 tsp. baking powder
    1 c. walnuts (optional)
Preparation
    In a bowl, beat the 3 eggs until frothy.
    Add the sugar, oil and vanilla; beat until the mixture is thick and lemon colored. Stir in the zucchini, flour, cinnamon, soda, salt and baking powder.
    Add nuts if desired.
    Pour this mixture into 2 greased and floured loaf pans and bake in a 350\u00b0 oven for 1 hour.
    Cool 10 minutes.
