Zucchini Relish - cooking recipe
Ingredients

10 c. grated zucchini
4 c. chopped onion
2 c. chopped red bell pepper
2 c. chopped green peppers
1/2 c. canning salt
1 tsp. celery seed
1 tsp. turmeric
1/2 tsp. black pepper
1 tsp. cornstarch
2 1/2 c. vinegar
4 1/2 c. sugar
Preparation

Mix first 4 ingredients. Add canning salt and let stand overnight.
Next morning, squeeze out and rinse in cold water. Squeeze out cold water.
Put in cooking kettle and add remaining ingredients.
Boil all ingredients for 20 minutes.
Seal in jars. Makes 7 to 8 pints.
