Zucchini Relish - cooking recipe

Ingredients
    12 c. shredded zucchini
    4 c. diced onions
    5 Tbsp. salt
    2 1/2 c. vinegar
    6 c. sugar
    1 Tbsp. dry mustard
    3/4 Tbsp. cornstarch
    3/4 tsp. nutmeg
    3/4 tsp. turmeric
    1 1/2 tsp. celery seed
    1/2 tsp. pepper
    1 red pepper, diced
    1 green pepper, diced
Preparation
    Mix zucchini, onions and salt; let set overnight.
    Rinse and drain in the morning.
    Add the remaining ingredients and mix well. Cook for 30 minutes.
    Pour into jars and seal.
