Ingredients

4 medium potatoes
2 eggs, beaten
1 small finely chopped onion
1/4 c. flour
1 tsp. salt
1/4 c. butter
Preparation

Shred enough potatoes to make 4 cups.
Drain.
Mix in all ingredients except butter.
Melt 2 tablespoons butter on a 12-inch skillet or griddle over medium heat.
Pour 1/2 cup of batter for each Boxti.
Flatten out with spatula.
Grill on each side for 2 minutes or until golden brown.
Repeat for rest of batter.
Makes 8 Boxti.
Batch can be doubled, but must be cooked.
