Pineapple-Carrot Bread - cooking recipe
Ingredients

3 c. all-purpose flour
2 c. sugar
1 tsp. ground cinnamon
1 tsp. soda
3/4 tsp. salt
3 eggs
2 c. shredded carrots
1 c. vegetable oil
1 (8 oz.) can crushed pineapple, drained
1 c. chopped nuts (pecans or walnuts)
2 tsp. vanilla
3/4 c. confectioners sugar
1 to 2 1/2 tsp. milk
Preparation

In a large bowl, combine flour, sugar, soda, salt and cinnamon.
In another bowl, beat eggs; add carrots, oil, pineapple, nuts and vanilla.
Add dry ingredients and stir until moistened.
Spoon into two greased and floured 8 1/2 x 4 1/2 x 2 1/2-inch loaf pans.
Bake at 350\u00b0 for 60 to 75 minutes, until loaves test done.
Cool for 10 minutes in pans before removing to wire racks.
Cool.
Combine confectioners sugar and milk.
Drizzle over loaves.
