Cracklin' Bread - cooking recipe

Ingredients
    2 c. corn meal
    1 c. boiling water
    1 Tbsp. shortening
    2 eggs
    2 1/2 c. milk
    1 tsp. salt
    2 tsp. baking powder
    1 c. broken cracklings
Preparation
    Scald corn meal with boiling water.
    Add shortening and cool slightly.
    Beat eggs thoroughly.
    Add milk and salt.
    Combine the two mixtures.
    Add baking powder and cracklings and blend thoroughly.
    Turn into well-greased pan and bake in a moderately hot oven at 375\u00b0 for 25 to 30 minutes.
    Makes 6 servings.
